The recently refurbished 5-star Sheen Falls Lodge in Kenmare has appointed Tony Schwarz as its new Executive Head Chef.
Nestled in the spectacular Kerry countryside, the hotel is home to the award-winning The Falls Restaurant, where guests enjoy a contemporary fine dining experience with a menu that celebrates the finest locally-sourced produce.
The new menus at this picturesque restaurant are designed to cater for modern food trends, offering a light but wholesome fare that caters for a variety of dietary requirements.
Originally from Carrigaline, Co Cork, Tony brings over 20 years’ experience in world-class kitchens to Sheen Falls Lodge.
Having trained under Gerry Galvin at Drimcong House and worked with Evan Doyle at Killarney’s The Strawberry Tree, Tony was previously Head Chef at multi-award winning restaurant, The Mustard Seed in Co Limerick.
Following this, he and wife Bobbie ran The White Sage in Adare – awarded a Michelin Bib Gourmand in 2010 – and most recently, Tony worked in the luxurious St Michael’s Manor Hotel, located on the outskirts of London before joining the team at Sheen Falls Lodge.
Tony’s culinary style could be described as modern European cuisine with traditional French technique, applying his classical French training to contemporary dishes and flavours.
Speaking on his appointment, Tony said: “I have always been passionate about farm-to-table cooking, creating dishes from scratch using the finest and freshest locally sourced ingredients.
Access to some of the country’s finest suppliers on the hotel’s doorstep, a shared passion for excellence and a longstanding grá for Kenmare are among the factors that enticed me to join the team at Sheen Falls Lodge.
I have great ambition for the dining experience at the hotel and I am delighted to help further enhance this wonderful property’s offering.”
